Question: Who are the Colonial Williamsburg Cookbook?If so, can you tell me the recipe for Brunswick Stew in this book? I can not think I lost my recipe! Worse yet, I have my husband's family, I would do it again, I promise! Please help. Thank you!
Answer: I could not find that a cookbook out, but here is one from the southern foods. if they do not look familiar, there is much more at this site. Southern Soul Food This Brunswick stew with beans, chicken, potatoes, tomatoes and corn, along with spices and Lima. Ingredients: • 1 broiler or about 3 1 / 2 pound chicken parts • 1 2.1 • 1 teaspoon salt 1 / 2 cups diced red skin potatoes • 1 large can (15 oz) tomato sauce • 1 1 / 2 cups lima beans, frozen or fresh • 4.3 • 1 cup chopped onion 1 / 2 to 2 cups corn kernels • 1 teaspoon sugar • 1 / 4 teaspoon salt • 1 / 4 teaspoon Pepper • 1 / 8 teaspoon ground red pepper • 1 / 8 teaspoon dried oregano • 1 / 4 teaspoon poultry seasoning Preparation: chicken and 1 1 / 2 teaspoon salt in a large Dutch Oven, add water to cover chicken. Bring to a boil, cover, reduce heat and simmer for about 2 hours, until meat is done and falling off the bone. Drain, reserve broth. When cool enough to handle, remove and discard skin from chicken. Bone chicken and chop meat, broth set aside. Skim fat reserved. Return broth Dutch Oven, bring to a boil. reduce heat and let simmer, uncovered, until broth is reduced to 2 cups. Add potatoes and simmer 10 minutes. Add tomato sauce, Lima beans and onions, and cook another 20 minutes. Stir in reserved chicken, corn, and the remaining ingredients and simmer an additional 10-15 minutes or until the vegetables are soft. Serves 6-8. ABOUT.COM: SOUTHERN FOOD
