I know there are tons of websites, but I'm looking for books .... any ideas?
Answer: I did this several years ago, and how I wish I had found something like it when I started on my own. It's called Cooking: A common sense guide. It is published by Bay Books. The ISBN is 0681331976 on mine and here is a link to Amazon http://www.amazon.com/Cooking-Commonsense-Guide-Jane-Price/dp/0681331976 The great thing about this book is that the first few chapters give you the basics of pretty much everything, including pictures. And explains all or most of the concepts like the ones you have mentioned ... Braising, blanching, etc. 2 Choice of: Joy of Cooking "New York Times Cookbook by Craig Claiborne stand (this is like my Bible cookbook)
