Can I use olive oil for butter in the shortbread?
Or you can use butter, but a little olive oil. I found it easier to whisk the mixture. Now, I wonder if I can be all olive oil instead of butter because its healthier.
Personally I would not. Should be dry shortbread and scaly, and oil use in baking helps to wet the cake or biscuits and soft. Similarly, the oil could give the shortbread a funny taste. Also note that if you cook with olive oil, it is not really that much healthier. Denatured during cooking oil so that it loses some of its healthy properties.
