Great Cooking
Good suggestions for cooking a really great breakfast or brunch?
Both are great because they were the night before .... do not rushing around in the morning! Serve with fresh fruit. Stuffed French Toast 24 slices raisin bread, crusts trimmed 8 eggs 3 cups low-fat or whole milk 1 cup half-and- halb 1 cup granulated sugar 1 tablespoon vanilla sugar 1 / 8 teaspoon ground nutmeg Two 8-ounce packages Cream Cheese softened Neufchatel or regular, cinnamon sugar, optional 1st Grease a 13 x 9-inch glass baking dish. Arrange 12 of the bread slices in the bottom of the pan, slightly overlapping. 2nd 6 egg yolks in a large bowl until well beaten. Add the milk, half and half, and ½ cup of granulated sugar, mix well. For half of the milk mixture evenly over the bread slices. 3rd Combine the remaining 2 eggs, ½ cup granulated sugar, vanilla, nutmeg, and Cream Cheese in a mixer. Cover and blend until smooth. Pour the mixture over the cheese Bread in the pan. Arrange the remaining 12 bread slices on top of the cheese mixture, slightly overlapping, and pour the remaining milk mixture evenly over all. Cover with plastic wrap and into the refrigerator overnight. 4th Preheat the oven to 350 degrees F. 5 Remove the plastic foil from the pan. Bake 55 minutes or until a Knife inserted in center comes out clean. Remove from the oven and stand for 10 minutes. Sprinkle with cinnamon sugar, if desired. Serves 8 to 12 Farmers Breakfast Casserole 24 ounces frozen hash browns 8 eggs, beaten 1 cup milk 1 cup 1 / 2 ham, cut into 1 inch pieces 8 ounces cheddar cheese 1 / 2 cup chopped onions chopped 1 / 2 teaspoon salt 1 / 2 teaspoon pepper in a 9 x 13 greased baking sheet pan, layer potatoes, ham, onions and cheese. In a medium bowl, eggs, milk, salt and Pepper, eggs, beat well until thoroughly incorporated. Pour over potatoes, ham layers. Cover and refrigerator overnight. To prepare: Preheat oven to 350 degrees, remove cover and bake for about 60 minutes.

Melt & Mix Shortbread recipe?
I am looking for a shortbread recipe for melt & mix - I know there is one in the Australian Women's Weekly Best Biscuits Cookbook but I can not find my copy. Can someone help me?
Ingredients 125g flour 125g flour 125g cornflour 125g caster sugar SR 250 g butter Method Sift dry ingredients into a large bowl. Melt butter gently in a saucepan. Pour melted butter into the dry ingredients and mix evenly spread in a baking tray (40cm x 25cm) Place the baking sheet in a moderate oven (such as a fan oven at 150C) and bake until golden brown. Choose from the oven and cut into portions, dust with powdered sugar and cool completely before storing in an airtight container.
