How to make the lettuce cups?

To make the lettuce cups for Surimi seafood lettuce cups recipe:

Making Surimi lettuce cups

  • cut off the bottom third of the lettuce head
  • soak lettuce top in ice water for 10 minutes (this helps separate the leaves)
  • separate the outer lettuce leaves, one at a time, to make the lettuce cups
  • using scissors, trim each lettuce cup to form circles

A head iceberg lettuce should give 8-10 lettuce cups. Save the lettuce core for a chopped lettuce salad.

How to make the Surimi seafood salad?

To make Surimi seafood salad:

  • combine Surimi seafood, cooked rice, cucumber and avocado in a large bowl
  • add salad dressing
  • toss to coat all ingredients of the Surimi seafood salad

To serve Surimi seafood lettuce cups, place lettuce cups on a large plate and fill each lettuce cup with about 1/2 cup of the Surimi-rice filling. Garnish with pickled ginger, nori, and sesame seeds to serve. Note that you can omit any ingredients of this Surimi seafood recipe if you don't like them.
