Thai Steamed Banana Cake Recipe

Below is a simple Thai steamed banana cake recipe or Kanom kluay (aka khanom kluay or khanom kluai). There are more complicated version of this Thai steamed banana cake recipe but the recipe below is very easy to make. You can steam the bananas in little banana leaf boats or in little bowls.

Thai Steamed Banana Cake Recipe

If you cannot obtain grated coconut then you can use unsweetened desiccated coconut but it needs to be soaked in water for about 10 minutes before using.

Ingredients for making the steamed banana cake Thai style
  • 120 g (1 cup, 4 oz) rice flour
  • 30 g (¼ cup, 1 oz) tapioca flour
  • 130 g (1½ cup, 4½ oz) sugar
  • 125 ml. (½ cup, 4 fl oz) thick coconut milk
  • 100 g (3 cups, ½ oz) grated coconut
  • 10 small mashed bananas (or 5 large bananas)
  • ½ teaspoon salt
Instructions for preparing Thai steamed coconut banana cake
  • Put the bananas into a bowl along with rice flour, tapioca flour, sugar and salt, coconut milk, and ¾ of the grated coconut
  • Mix well until all the ingredients are thoroughly combined
  • Put the mix into a steaming or baking tin (8' x 8' or 20 cm x 20 cm)
  • Sprinkle the rest of the grated coconut on top
  • Steam for 30 minutes or bake in the oven (180 degree C or 360 degree F) for 30 minutes
  • Once it is cooked, turn the cake off and the tin
  • Serve hot or cold
