The ingredients for the ginger sauce are:
- 30 ml. (2 tablespoons) fish sauce
- 45 ml. (3 tablespoons) oyster sauce
- 30 ml. (2 tablespoons) light soy sauce

- Put oil into the wok
- When the oil is hot, fry the garlic until it starts to turn brown
- Add the onion and the chicken
- Stir fry until the outside of the chicken turn white
- Add the ginger
- Stir fry to combine
- Add the sauce ingredients and stir fry again
- Add the chilli and chicken stock
- Stir fry for 1 minute
- Add spring onions and stir fry to combine
- Serve
