Pad Woon Sen

Pad Woon Sen ingredients
- ⅓ cup Oil
- ½ cup Shrimp or other meat
- 1 ½ teaspoon Garlic - minced
- 1 pack Bean threads or mung bean noodles (Woon Sen) (1 8oz)
- ½ cup Canned straw mushrooms
- ⅓ cup Carrots - thinly sliced
- ⅓ cup Canned baby corn
- 3 ½ tablespoon Light soy sauce
- 1 ½ teaspoon Sugar
- 2 tablespoon Fish sauce (Nam Pla)
- ½ cup Green onions - cut 1" Pieces
- ⅛ teaspoon Ground white or black Pepper

Preparing the meat:
Cut the meat to the size you want and set aside. If you are preparing shrimps, peel and devein them. You can leave the tails on or remove them. |

Preparing Woon Sen (softening Woon Sen)
Prepare the vegetables
- Rinse and drain the mushrooms and cut each in half.
Start the stir fry of Pad Woon Sen
- In a wok or a large fry pan, brown garlic in 1 tbsp of oil over high heat until brown. If you also want to fry some white onions, you can fry with the garlic. Add water to the onions if they begin to stick to the pan.
- Add meat or shrimps and saute until cooked (about 2-5 mins).
- Transfer the meat or shrimps to a plate and set aside.
- Heat the rest of the oil and add all the vegetables except the green onions. Saute for 2-3 mins.
- Stir in the bean threads and mix well (for about 1 minute).
- Add a little water if necessary.
- Return the meat and shrimps to the mixture, add seasonings and mix well.
- Add one or two eggs if desired.
- Sprinkle green onions and heat through.
- Serve hot on its own or with rice.
