Japanese Egg Recipe (Tamago)
The Japanese has special egg recipe. The Japanese egg is sweet and Japanese egg omelet is unlike other types of omelet. Japanese egg omelet served with sushi rice is called Tamago. Sometimes Tamago is spelled Tamako.

What is Tamago?
Tamako is the name given to Japanese sweet rolled egg.
Recipe for making Japanese sweet egg omelet or Tamago
Ingredients for making Japanese sweet egg or tamago:
- 4 large eggs
- 2 tbsp sugar
- 1 tsp soy sauce (Shoyu in Japanese, Kikkoman will do)
Making Japanese sweet egg omelet or Tamago
- Combine ingredients above to make the Japanese sweet egg mixture.
- Whisk the eggs well, till sugar and soy sauce are completely mixed in.
- you may want to grease the pan with butter
The first 1/3 of the Japanese sweet egg omelet (Tamako)
- Pour 1/3 of mixture on bottom of well greased tamago pan (square pan especially for making Japanese sweet egg omelet), tilting pan till it is evenly distributed.
- On medium heat, cook till the edges start to firm up.
- Using a pair of chopsticks (or spatulas) roll the egg mixture towards one side of the pan, pressing the eggs down as you do so to create that thick pressed consistency.
The second 1/3 of the Japanese sweet egg omelet (Tamako)
- Pour another 1/3 of the mixture on the side now vacated by the cooked eggs, lifting the cooked side to make sure that the eggs go underneath.
- When the eggs start to firm up again, roll the eggs again, starting with the already cooked portion and rolling in the opposite direction. Continue to press, making the eggs denser.
The third 1/3 of the Japanese sweet egg omelet (Tamako)
- Pour the remaining 1/3 and continue as before, making sure the eggs go under the cooked portion. When the egg starts to cook, start rolling again, in the other direction.
